Ingredients

3 lbs ripe tomatoes , preferably plum
2 -3 habanero peppers , to taste
1 unpeeled head of garlic , broken apart
2 garlic cloves
1/3 cup good quality olive oil
1 bunch fresh cilantro , chopped
8 salmon fillets
1 container ricotta cheese
1 cup creme fraiche
3 eggs
1 box no-boil lasagna noodles
1 cup queso fresco , crumbled
1/2 1/2 cup vegetable broth or 1/2 cup water

Cilantro Salmon with Smoky Tomato-Habanero Lasagna is a fusion dish inspired by Mexican flavors. Instructions

1.Preheat oven to 350°F (175°C).
2.Cut each tomato into 6 wedges and place in a large mixing bowl.
3.Remove the stems from the habanero peppers and roughly chop. Add the peppers to the bowl with the tomatoes.
4.Add the unpeeled garlic head, 2 garlic cloves, olive oil, cilantro, and salt to the bowl. Toss everything together until the tomatoes are evenly coated with the mixture.
5.Spread the tomato mixture out onto a parchment-lined baking sheet. Roast in the oven for 20 minutes, then remove and let cool.
6.While the tomatoes are roasting, mix together the ricotta cheese, creme fraiche, eggs, and salt in a separate bowl.
7.In a 9x13 inch baking dish, begin assembling the lasagna by spreading a thin layer of tomato sauce on the bottom of the dish.
8.Top the sauce with a layer of lasagna noodles, followed by a layer of the ricotta mixture and some of the crumbled queso fresco.
9.Repeat the layering with the tomato sauce, lasagna noodles, ricotta mixture, and queso fresco until all ingredients are used up.
10.Pour 1/2 cup of vegetable broth or water over the top of the lasagna.
11.Cover the pan with foil and bake for 30 minutes. Uncover and bake for an additional 20-30 minutes, or until the cheese on top is browned and bubbly and the noodles are cooked through.
12.While the lasagna is baking, season the salmon fillets with salt.
13.Heat a greased grill or grill pan over medium-high heat. Grill the salmon fillets for 3-5 minutes per side, or until cooked to your desired degree of doneness.
