Ingredients

3 small limes , juice and zest of
3 -4 tablespoons olive oil
2 garlic cloves , minced
1/2 teaspoon cumin
1/2 teaspoon onion powder

1/4 cup fresh cilantro , chopped
4 boneless skinless chicken breasts , trimmed of any fat
2 large ripe mangoes , peeled and chopped
1 can black beans , drained and rinsed
2 green onions , chopped
1 jalapeno , chopped ( I removed the seeds and veins )
1 handful fresh cilantro , chopped
1 teaspoon cumin
1 large lime , juice of

Instructions

1.In a large sealable plastic bag, combine lime juice, olive oil, garlic, cumin, onion powder, red pepper flakes, salt, black pepper, and cilantro.
2.Add chicken breasts to the marinade and seal the bag. Shake to coat chicken evenly and refrigerate for at least 30 minutes.
3.While the chicken is marinating, prepare the mango and black bean salsa. In a medium bowl, combine chopped mangoes, black beans, green onions, jalapeno, cilantro, cumin, and lime juice. Mix well and set aside.
4.Heat a grill or grill pan over medium-high heat. Grill the marinated chicken breasts for 5-6 minutes on each side, or until fully cooked.
5.To assemble the tacos, fill each warm corn tortilla with sliced grilled chicken, mango and black bean salsa, cotija cheese, a dollop of sour cream, and guacamole. Serve immediately.
