Ingredients

8 large eggs
2 tablespoons chopped fresh basil
3 tablespoons grated parmesan cheese
salt & freshly ground black pepper
6 slices pancetta , chopped
1 lb potato , peeled and cut into 1/4-inch slices
2 tablespoons olive oil , divided
2 small cipollini onions ( or more )
2 garlic cloves ( or more )
2 -3 cups spinach or 2 -3 cups arugula , coarsely chopped
1/2 cup chopped fire roasted peppers ( to taste )
3 ounces sliced provolone cheese ( optional )

Instructions

1.Whisk together eggs, basil, parmesan cheese, salt and pepper in a large bowl.

3.Add potato slices to the same skillet and cook for 5 minutes until tender.
4.Add onion and garlic until they become softened.
5.Add spinach and roasted pepper. Cook for 2-3 minutes until the spinach wilts.
6.Add pancetta to the skillet with vegetables.
7.Pour the egg mixture over the top of vegetables and pancetta. Cook for 3 minutes until the eggs begin to set.
8.Top the frittata with provolone cheese.
9.Transfer the skillet to the preheated oven. Broil for 2-5 minutes, until the cheese is melted, golden and bubbly at the edges, and the eggs are cooked through.
10.Cut into wedges and serve hot.
