5 lbs napa cabbage
1 daikon radish , about 8 inches long
1 head garlic
3 bunches spring onions
3 Thai peppers
1 cup sea salt
3/4 cup korean chili powder
6 tablespoons fish sauce
3 1/2 tablespoons brown sugar
2 tablespoons fresh ginger
Kimchi is a traditional Korean dish that has been enjoyed for centuries. It is made by fermenting vegetables, usually cabbage, with a variety of spices and seasonings. Instructions

1.Cut the napa cabbage into quarters, then chop it roughly into 2-3 inch pieces.
2.Cut the daikon radish into matchsticks about 2 inches long.
3.In a large mixing bowl, add the chopped cabbage and daikon radish.
4.Peel the garlic and separate the cloves, then crush or chop them into small pieces. Add garlic to the bowl.
5.Cut the roots off the spring onions, then cut them diagonally into 1-2 inch pieces. Add spring onions to the mixing bowl.
6.Cut the stems off the Thai peppers, then slice them thinly. Add the sliced peppers to the bowl.
7.Sprinkle 1 cup of sea salt over the vegetables, and massage them gently for 5-10 minutes until softened.
8.Add enough water to cover the vegetables and let them soak for an hour.
9.In a separate bowl, mix together the Korean chili powder, fish sauce, brown sugar, and fresh ginger until well combined.
10.Drain the vegetables after an hour, then rinse them several times under cold water to remove any excess salt. Squeeze out any excess water and add the vegetables to the chili powder mixture in the bowl.
11.Mix the vegetables and chili powder mixture together thoroughly, wearing gloves if necessary to avoid staining your hand.
12.Transfer the kimchi into a large glass jar or container, pressing down to remove any air pockets, and seal the lid tightly.
13.Let the kimchi ferment at room temperature for 1-2 days, then transfer it to the refrigerator to chill before serving.
