1/4 teaspoon ground black pepper
1/2 teaspoon ground szechuan peppercorns
1 teaspoon dried chili pepper flakes
1 teaspoon ground cumin
1 teaspoon fennel seed
1/2 teaspoon ground ginger powder
2 teaspoons peanut oil
1 teaspoon light soy sauce
2 teaspoons shaoxing wine or 2 tablespoons dry sherry
1/2 teaspoon ground paprika
1/2 teaspoon sea salt
4 garlic cloves , very finely chopped
1 lb lamb fillet , very finely sliced and cut into small pieces
olive oil , as needed

Instructions

1.In a small bowl, mix together water, ground black pepper, ground Szechuan peppercorns, dried chili pepper flakes, ground cumin, fennel seed, ground ginger powder, peanut oil, light soy sauce, shaoxing wine/dry sherry, ground paprika, and sea salt to make a marinade.
2.Add very finely chopped garlic and lamb fillet (sliced into small pieces) to the marinade.
3.Mix everything well, cover and refrigerate for at least 2 hours or overnight.
4.Preheat grill to medium-high heat.
5.Thread the lamb onto skewers and brush with olive oil on all sides.
6.Grill for 8-10 minutes, turning occasionally, until nicely browned and tender.
