Christmas Plum Pudding is a beloved holiday tradition in many parts of the world, particularly in the United Kingdom and other English-speaking countries. This rich, dense dessert is typically made several weeks before Christmas, so that the flavors can meld together and develop over time. It is often served with a variety of toppings, such as whipped cream, brandy butter, or ice cream. While it may seem daunting to undertake the process of making a Christmas Plum Pudding from scratch, the end result is well worth the effort.

Instructions

.Combine the raisins, golden raisins, currants, candied orange peel, almonds, shredded apple, and suet in a large mixing bowl.
.In a separate bowl, mix together the flour, brown sugar, breadcrumbs, allspice, and salt.
.Beat the eggs in another bowl and mix in the brandy and lemon juice. Pour the egg mixture into the fruit mixture and mix well.
.Gradually add the dry ingredients into the fruit mixture, stirring well to combine.
.Butter two 1-pound pudding basins and add the mixture, filling each to about 2/3 of the way full.
.Cover each basin with a layer of buttered greaseproof paper, then a layer of foil. Tie a string around the rim of each basin to ensure the lids stay on.
.Place both basins in a large saucepan and pour enough boiling water into the pan to come halfway up the sides of the basins. Cover the entire pan with a tight-fitting lid.
.Steam the puddings for 5 hours, checking the water level periodically and adding more boiling water as necessary. Remove the puddings from the steamer and let them cool to room temperature. Store in a cool, dry place until ready to serve.
.To reheat, steam the pudding for 1-2 hours before serving, then carefully remove the basins from the steamer and let them cool for 5-10 minutes before turning the puddings out onto plates.
