100 g fresh white breadcrumbs

2 teaspoons fresh thyme or 1 teaspoon dried thyme , chopped
100 g cranberries ( fresh or frozen )
500 g boneless skinless chicken breasts
500 g ready-made shortcrust pastry
beaten egg , to glaze

Instructions

1.Preheat oven to 375°F (190°C).
2.Heat olive oil and butter in a large frying pan and cook onion until softened but not browned.
3.Add sausage meat or skinned sausages and cook until browned.
4.Stir in the lemon zest, breadcrumbs, apricots, chestnuts, thyme, and cranberries.
5.Cook the chicken breasts in boiling water for 15 minutes then chop and stir into the mixture.
6.Season to taste and set aside to cool.
7.Roll out the pastry on a lightly floured surface and use to line a deep 9-inch (23 cm) pie plate.
8.Spoon the mixture into the pastry-lined pie plate. Brush the edges of the pastry with beaten egg.
9.Cover with a pastry lid, pressing the edges tightly together to seal. Brush the top with beaten egg.
10.Make two small slits in the center of the pastry lid and cover the edges with foil.
11.Bake for 40-45 minutes or until the pie is golden brown and the filling is cooked through.
