2 liters good quality vanilla ice cream
200 g peppermint candies , bullseye lollies or 200 g candy canes

Instructions

1.Take the peppermint candies and smash them into small pieces. You can either put them into a plastic bag and run a rolling pin over it or use a food processor.
2.Let the ice-cream sit at room temperature for around 10 minutes, until it is soft.
3.In a bowl, mix the ice-cream with the crushed peppermint candies until well combined.
4.Transfer the mixture into a freezable container. Cover it with cling wrap, pressing it onto the surface of the ice-cream to prevent ice crystals from forming.
5.Freeze it for at least 6 hours or overnight.
