Ingredients

1 lb dried cod , prepared as follows in directions ( baccala )
2 tablespoons olive oil
3 medium potatoes , peeled and diced small
2 medium onions , peeled and diced
1 can italian peeled plum tomatoes , coarsely chopped ( with the juices )
1/2 cup chopped flat-leaf Italian parsley
1/2 cup seedless raisin , plumped in warm water and drained
1/4 cup pine nuts , lightly toasted in a dry skillet on the stove ( pignoli )
2 tablespoons capers , rinsed and drained
1/4 cup green olives in brine , pitted and sliced
1 teaspoon salt
1 1/2 teaspoons fresh ground black pepper

Instructions

1.Rinse the baccala with cold water to remove any excess salt, then let it soak in cold water for 24 hours, changing the water at least 3 times to remove the remaining salt.

3.Add the olive oil to a large pan and cook the onions until they are translucent.
4.Add the potatoes and cook for a few more minutes until they start to soften.
5.Add the tomatoes, parsley, raisins, pine nuts, capers, olives, salt, and pepper to the pan and stir everything together.
6.Add the baccala to the pan, cover it, and cook for about 30 minutes on medium heat until the potatoes and baccala are cooked through.
