Ingredients

1 cured pork knuckle
1 lb cured pork belly
1 lb cured and marbled pork neck
1 garlic sausage
4 lbs fresh sauerkraut
3 garlic cloves
3 laurel leaves
5 juniper berries
1 sliced onion
1 tablespoon lard
1/2 liter dry white wine
black pudding
liverwurst
6 big potatoes
Choucroute Garnie is a traditional Alsatian dish that dates back to the 17th century. It was originally a peasant dish made with sauerkraut and cheap cuts of meat. Instructions

1.Rinse and drain the sauerkraut in cold water. Squeeze out any excess water
2.In a large stockpot, melt the lard and cook the onions until translucent
3.Add garlic and juniper berries and cook for another minute
4.Add the sauerkraut, laurel leaves and white wine to the pot
5.Add the cured pork belly, neck and pork knuckle. Cover with water.
6.Simmer the stew until the meat is cooked through and tender, around 2 to 3 hours.
7.Remove the cooked sausages and transfer the meats to a platter.
8.Serve hot with mustard, black pudding, liverwurst and boiled potatoes.
