Ingredients

1 medium onion , sliced
1 teaspoon bacon drippings
3 fresh pork hocks or 2 lbs pork ribs , cut into 3 rib portions
3 smoked pork shoulder , rolled or ( 1 1/2-2 lb ) pork loin chops , cut 3/4 inch thick trimmed of fat
3 cans sauerkraut , rinsed and drained
2 cooking apples , peeled , cored and cut into wedges
2 teaspoons brown sugar
4 whole cloves
3 juniper berries , crushed ( optional )
2 garlic cloves , minced
1 bay leaf
1/8 teaspoon pepper
1 cup rhine wine or 1 cup white wine
1 lb sausage links ( use desired combination of fresh bockwurst , thuringer , precooked knackwurst and or or precooked fran )

Instructions

1.Preheat oven to 350°F.
2.In a large skillet, sauté onion in bacon drippings until softened.
3.Add the pork hocks and brown on both sides.
4.Add the smoked pork shoulder (or pork loin chops) and brown on both sides.
5.Add the sauerkraut, apples, brown sugar, whole cloves, juniper berries (optional), minced garlic, bay leaf, pepper, and wine.
6.Bring mixture to a simmer and then transfer to a large oven-proof casserole dish.
7.Insert sausage links into the mixture.
8.Bake for 2-3 hours, or until the meat is very tender.
9.Serve hot with boiled potatoes on the side.
