Ingredients

2 2 lbs pork or 2 lbs veggie crumbles
3 1/2 teaspoons salt
6 tablespoons pure red chili powder
6 -20 small hot dried red chilies , crushed or 2 teaspoons paprika
4 -6 garlic cloves , minced
2 tablespoons dry oregano leaves
2 teaspoons whole cumin seeds , crushed
1 teaspoon fresh ground black pepper
1 1/2 teaspoons sugar
4 tablespoons cider vinegar or 4 tablespoons wine vinegar
2 1/2 tablespoons water

Instructions

1.Combine salt, chili powder or mixture (paprika and crushed red pepper flakes), minced garlic, oregano, cumin seeds, black pepper, sugar, cider vinegar (or wine vinegar), and water in a bowl.
2.Mix the above mixture with pork or veggie crumbles until all the meat is covered with the mixture.
3.Cover the bowl and refrigerate it for at least few hours or overnight.
4.Once ready to cook, heat a skillet over medium heat and add the chorizo mixture. Cook until done, about 8-10 minutes.
