1 package beef chorizo sausage , bulk , casing removed
1 cup medium chunky salsa , drained
1 cup mild cheddar cheese , shredded
6 -8 large flour tortillas
guacamole ( optional )
sour cream ( optional )
Chorizo Taquitos are a Mexican-inspired appetizer that can be made quickly and easily. These crispy and flavorful taquitos are filled with a spicy and cheesy mixture of beef chorizo sausage, chunks of salsa and shredded cheddar cheese. The taquitos are rolled tightly and baked until crispy and golden brown. They are served with optional guacamole and sour cream for dipping and are perfect for game day or party appetizers.

Instructions

1.In a skillet, brown the chorizo sausage over medium-high heat, breaking it up into small pieces as it cooks.
2.Once the chorizo is cooked through, remove from heat and stir in the drained salsa and shredded cheddar cheese.
3.Preheat the oven to 400°F and line a baking sheet with parchment paper.
4.Working with one tortilla at a time, spoon a few tablespoons of the chorizo filling onto the center of the tortilla.
5.Roll the tortilla tightly around the filling, placing it seam-side down on the prepared baking sheet.
6.Repeat with the remaining tortillas and filling until all six to eight taquitos are formed.
7.Bake the taquitos for 20-25 minutes, or until the tortillas are crispy and slightly golden brown.
8.Serve with guacamole and/or sour cream, if desired.
