Instructions

1.Preheat oven to 375 degrees F (190 degrees C).

3.Heat 1 tablespoon of olive oil in a skillet over medium heat until hot. Cook and stir the minced garlic mixture until soft and fragrant.

6.Cut a pocket into the thick end of each chicken breast half. Stuff each with 1 tablespoon prepared guacamole, 2 tablespoons queso quesadilla cheese, and 1 tablespoon the cooked chorizo. Secure with a toothpick.
7.Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Cook the chicken breasts in the skillet until browned on all sides, about 5 minutes per side. Transfer the chicken to a baking dish.
8.Pour the mole sauce over the chicken, making sure it is well-coated. Bake the chicken in the preheated oven for 20 to 30 minutes, until cooked through and no longer pink in the center.
