Ingredients

6 ounces mexican chorizo sausages ( about 3 )
1/2 lb potato , cooked and cut into small cubes
2 canned chipotle chiles in adobo , roughly chopped , to taste
salt
1 cup shredded monterey jack cheese or 1 cup cheddar cheese
12 flour tortillas or 12 corn tortillas
2 tablespoons melted butter
sour cream , to garnish
salsa , to garnish
Chorizo-Potato Quesadillas are a variation on the classic Mexican dish of quesadillas. The combination of spicy chorizo sausage and creamy, tender potatoes makes these quesadillas the perfect comfort food. Instructions

1.In a large skillet over medium heat, cook the chorizo for about 5 minutes or until it has released most of its fat.
2.Add in the cooked potatoes and chipotles in adobo, and season with salt. Cook for another 5 minutes, stirring occasionally.
3.Preheat the oven to 400°F.
4.Take six tortillas and sprinkle 1/3 cup of shredded cheese on each shell. Place the chorizo-potato mixture on top of the cheese. Add another layer of cheese.
5.Put the remaining tortillas on top, and brush them with melted butter.
6.Grease a baking sheet and place the quesadillas on it. Bake them for 20-25 minutes or until golden brown. Remove from the oven and let them cool for a bit.
7.Cut into quarters and serve with a dollop of sour cream and salsa.
