Ingredients

2 -3 tablespoons vegetable oil
2 cups shredded potatoes or 2 cups store-bought hash browns
1/2 cup diced onion
1/2 cup diced green pepper
1 tablespoon diced jalapeno pepper ( optional )
1 cup ground chorizo sausage , browned
1/2 cup diced tomatoes
5 eggs
1/2 cup shredded cheddar cheese

The Chorizo Garbage Plate is a spinoff of an original recipe, made with chorizo sausage as the main ingredient. It's popular in the Southwest region of the US and is usually served as a breakfast dish. It is a hearty meal that you can prepare in under 30 minutes, perfect for busy mornings.

Instructions

1.Heat 2 tablespoons of oil in a large skillet over medium heat. Add shredded potatoes, onion, green pepper, and jalapeno. Cook until the potatoes are golden brown, stirring occasionally, for about 12-15 minutes.
2.In a separate skillet, cook chorizo sausage until browned, then add diced tomatoes. Cook until the liquid evaporates, stirring occasionally, for about 8-10 minutes.
3.Crack the eggs into the skillet with the potatoes and cook until set, about 3-4 minutes.
4.Add cooked chorizo and tomatoes to the skillet with potatoes and eggs. Sprinkle shredded cheddar cheese on top. Lower the heat to medium-low, then cover and cook until cheese is melted, for about 2-3 minutes.
5.Serve hot with tortillas or toast.
