6 cups chicken broth
8 ounces jiffy yellow cornbread mix
2 teaspoons lime zest
2 tablespoons milk
1/2 cup sour cream
1/2 cup fresh cilantro , coarsely chopped

Instructions

1.Heat a tablespoon of oil in a large pot over medium heat. Add chorizo sausage and cook until browned.

3.Add in the flour and stir for 1 minute.
4.Mix in cumin, garlic powder, salt and stir to combine.
5.Add in leftover cooked chicken and canned fire-roasted diced tomatoes with their juices, chicken broth. Bring to a boil, reduce heat and let simmer for 10-15 minutes.
6.Prepare the dumplings by mixing together the jiffy mix, milk, lime zest, cilantro. Drop spoonfuls of the dough into soup.
7.Increase heat to medium and bring to a boil. Let simmer for 12-15 minutes.
8.Once dumplings are fully cooked, remove from heat and let sit for 5 minutes.
9.Serve soup with cilantro, sour cream, chopped avocado and fresh lime wedges on top.
