12 ounces portabella mushroom caps ( about 6 caps )
1 lb chorizo sausage , loose ( I use Mexican Chorizo doubled )
3 ounces cheddar cheese , shredded
1 ounce green onion , chopped
1/4 cup red wine

Instructions

1.Preheat oven to 375°F.
2.Wipe clean the portobello mushrooms and remove stems.
3.In a pan over medium heat, cook the chorizo until brown.
4.Off the flame, add green onions and red wine to chorizo.
5.Place mushroom caps into a baking dish, pre-cooked side down. Spoon chorizo mixture into each cap.
6.Sprinkle with shredded cheddar cheese.
7.Bake in the oven for 15-20 minutes until cheese is melted and bubbly.
