Ingredients

1 baking potato , peeled and quartered
2 tablespoons vegetable oil , plus more for frying
7 ounces mexican chorizo sausage , casings discarded ( about 2 links )
1 large onion , finely chopped
1 large tomatoes , finely chopped
1 jarred roasted red pepper , finely chopped
1/2 habanero pepper , seeded and finely chopped
salt and pepper
1/2 cup crumbled queso fresco
3 tablespoons chopped cilantro
18 corn tortillas
Chorizo and Potato Taquitos are a twist on traditional taquitos, filled with a savory mixture of spicy sausage, roasted red pepper, and mashed potato. The crispy, crunchy texture of the tortilla pairs perfectly with the creamy filling, while the cilantro and queso fresco add an extra burst of flavor. Instructions

1.Boil the potato until tender.
2.Heat 2 tablespoons of oil in a large skillet over medium heat. Add chorizo, onion, tomato, roasted red pepper, habanero, salt and pepper. Cook until vegetables are softened, about 10 minutes.
3.Mash potato and stir in chorizo mixture, queso fresco, and cilantro.
4.Heat 1 inch of oil in a large frying pan over high heat.
5.Warm the tortillas and place 2 tablespoons of filling down the center of each tortilla, roll up tightly and hold closed with a toothpick.
6.Fry the taquitos until crispy all over. Remove toothpicks before serving.
