Ingredients

2 red bell peppers
1 red chili pepper , fresh
2 tablespoons olive oil
1 brown onion , finely chopped
1 tablespoon tomato paste
2 -3 teaspoons harissa ( see my recipe )
4 garlic cloves , finely minced
2 teaspoons cumin , ground
3 cups fish stock
13 ounces crushed tomatoes
1 1/2 lbs firm white fish , cut in 3/4 inch chunks
2 bay leaves
2 tablespoons cilantro , chopped
6 slices baguette , cut thick
1 garlic clove , extra , cut in half
Chorba Bil Hout - Fish Soup is a popular traditional dish in North Africa, particularly in Algeria and Tunisia. Instructions

1.Preheat oven to 375°F. Line a baking sheet with parchment paper.
2.Remove the seeds and stems of the red bell peppers and red chili pepper. Cut them into small pieces and spread on the baking sheet. Drizzle with olive oil.
3.Roast for 15-20 minutes, or until peppers are soft and slightly charred.
4.In a large pot over medium heat, sauté finely chopped brown onion for 3-4 minutes. Add tomato paste, harissa, and finely minced garlic cloves. Stir until fragrant.
5.Add ground cumin, fish stock, and crushed tomatoes. Bring to a simmer.
6.Add cut-up white fish, bay leaves, and chopped cilantro. Simmer for 10-15 minutes, or until fish is cooked through.
7.Toast thick slices of baguette. Rub the cut side of extra garlic clove over each slice.
8.Ladle the soup into bowls. Top with roasted peppers and garlic-rubbed baguette slices.
