Ingredients

1/2 cup Irish whiskey ( Locke 's brand )
3/4 cup olive oil
1 garlic clove , minced
1 small onion , chopped
2 sprigs fresh thyme
1 sprig fresh rosemary
1/4 teaspoon cayenne pepper
salt & freshly ground black pepper
1/2 inch piece fresh ginger , peeled and grated
6 lamb chops

Instructions

1.In a large bowl, mix together Irish whiskey, olive oil, minced garlic, chopped onion, fresh thyme, fresh rosemary, cayenne pepper, salt and freshly ground black pepper, and grated fresh ginger.
2.Add in lamb chops, coat well and let it marinate in the fridge for at least 2 hours.
3.Heat a grill pan over high heat and cook the lamb chops for 3-4 minutes per side or until desired doneness is reached. Let it rest for 5 minutes before serving.
