6 dried shiitake mushrooms
4 ounces uncooked cellophane noodles
2 tablespoons sesame oil
2 teaspoons soy sauce
2 teaspoons sugar
3 teaspoons toasted sesame seeds , divided
2 teaspoons rice wine
1 garlic clove , minced
1/4 teaspoon pepper
1/2 lb sirloin beef , sliced thinly
1 tablespoon canola oil , divided
1 cup shredded cabbage
1 medium Spanish onion , sliced
1 medium carrot , peeled and shredded
2 green onions , chopped
2 cups torn spinach
Chop Chae is a classic Korean dish that is loved for its colorful and distinctive taste. Instructions

1.Soak the mushrooms in warm water for 30 minutes or until softened. Cut off and discard stems, then slice caps thinly.

3.In a small bowl, whisk together sesame oil, soy sauce, sugar, 2 teaspoons of sesame seeds, rice wine, garlic, and pepper. Reserve half for later use.
4.In a large skillet or wok, heat 1/2 tablespoon of canola oil over medium-high heat. Add the beef and cook for about 1-2 minutes or until browned. Transfer to a plate and set aside.
5.In the same skillet/wok, add the remaining oil, cabbage, onion, and carrot. Cook for about 2 minutes or until vegetables are slightly softened. Add the mushrooms, beef, noodles, reserved sauce, spinach, and green onions. Toss to coat and cook for another 2-3 minutes or until heated through. Sprinkle with the remaining sesame seeds before serving.
