1 pint fresh raspberry , plus
1/3 cup fresh raspberry
1/2 - 3/4 cup confectioners ' sugar
1 tablespoon fresh lemon juice
6 large eggs
2 cups whole milk
1 teaspoon vanilla extract
1 tablespoon sugar
1/2 teaspoon salt
2 tablespoons unsalted butter
8 slices brioche bread or 8 slices egg bread , 1/2 inches thick
4 ounces bittersweet chocolate chips or 4 ounces semi-sweet chocolate chips
3 sprigs of fresh mint ( to garnish )

Instructions

1.In a medium saucepan, combine 1 pint raspberries, 1/2-3/4 cup confectioners' sugar, and 1 tablespoon lemon juice. Cook over medium heat, stirring often until mixture thickens and boils.
2.Reduce heat, and let it simmer for 5 minutes.
3.Strain sauce into a fine-mesh strainer and discard seeds. Stir in 1/3 cup raspberries and set aside.
4.In a large mixing bowl, whisk together 6 eggs, 2 cups whole milk, 1 teaspoon vanilla extract, 1 tablespoon sugar and 1/2 teaspoon salt.
5.Spread 1 tablespoon chocolate chips on one slice of bread and then top with another slice to make a sandwich. Repeat to make 4 more sandwiches.
6.Melt 1 tablespoon butter in a large nonstick skillet over medium heat. Dip both sides of the sandwich into the egg mixture, lightly pressing if necessary to help absorb the mixture.
7.Fry the sandwich in the skillet, turning once, until golden brown, about 4 minutes each side.
8.Repeat to cook the remaining 4 sandwiches.
9.Serve French toast warm with raspberry sauce and garnish with fresh mint sprigs.
