1 1/4 cups blanched whole almonds ( about 7 ounces )

3 ounces bittersweet chocolate ( NOT unsweetened ) or 3 ounces semisweet chocolate , chopped fairly fine
1/4 teaspoon almond extract ( generous )
2 large egg whites
2 -5 tablespoons confectioners ' sugar , for rolling out cookies

Instructions

1.Preheat your oven to 350 degrees F ( 175 degrees C ) and line a baking sheet with parchment paper.

5.Stir in the almond extract and egg whites until the mixture forms a stiff dough.
6.On a surface dusted with confectioners' sugar, roll out the cookie dough to a thickness of 1/4 inch.
7.Cut out cookies using a cookie cutter and place them on the prepared baking sheet.
8.Bake the cookies until they are set, which takes about 10-12 minutes. Allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
