Ingredients

300 g waffles ( store purchased )
4 eggs
1/3 cup caster sugar
1 teaspoon vanilla extract
600 ml thickened cream
200 g frozen raspberries
200 g milk chocolate , chopped ( high quality )
icing sugar , to serve

Instructions

1.Preheat oven to 160C.
2.Cut the waffles into quarters.
3.In a mixing bowl, whisk together eggs, caster sugar and vanilla extract.
4.Add the cream to the mixture and whisk until well combined.
5.In a separate mixing bowl, mix together raspberries and chopped chocolate.
6.Arrange the waffle squares in a 20x30cm baking dish.
7.Pour the cream mixture over the waffles.
8.Gently press the raspberry chocolate mixture into the cream mixture.
9.Bake the waffle pudding for 45-50 minutes, or until golden on top.
10.Let it cool for a few minutes before serving, dust with icing sugar to serve.
