1/2 vanilla bean , split and scraped
1/4 cup coffee , hot
1 pinch kosher salt

Instructions

1.Preheat oven to 325°F.
2.In a large mixing bowl, whisk the egg yolks and 1/4 cup of granulated sugar until the mixture is smooth and pale yellow in color.
3.Heat the heavy cream, vanilla bean, and remaining 1/4 cup of granulated sugar in a saucepan over medium heat until the sugar has dissolved, and the mixture starts to steam.
4.Then pour the hot cream mixture into the egg mixture and combine.
5.Add the semi-sweet chocolate chips, coffee, and kosher salt to the mixture and whisk together until the chocolate has fully melted and the mixture is smooth.
6.Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl.
7.Pour the strained mixture into six 6-ounce ramekins, filling each one three-quarters full.
8.Place the ramekins in a baking dish, and pour hot water into the dish, filling it halfway up the sides of the ramekins.
9.Bake for about 35-40 minutes, until the edges are set and the centers of the custards are slightly jiggly.
10.Remove the ramekins from the baking dish and let them cool to room temperature on a cooling rack or countertop.
11.Then refrigerate for at least 2 hours or overnight.
12.When ready to serve, sprinkle a thin, even layer of granulated sugar over the top of each custard.
13.Use a kitchen torch to caramelize the sugar until it melts and turns golden brown.
14.Serve and enjoy!
