1/4 cup butter

Instructions

1.Preheat your oven to 350F.
2.Grease and flour a 9-inch cake tin.

4.Add in the egg yolks and mix until fully combined.
5.Melt the unsweetened chocolate squares in a microwave or double boiler.
6.In a separate mixing bowl, whisk together the flour, salt and baking soda.
7.Gradually fold in the flour mixture to the butter-sugar-egg yolks mixture using a spatula - then add sour milk and vanilla extract and keep mixing.
8.Stir in the melted chocolate.
9.In a small saucepan, combine the sugar and water and cook over medium heat, stirring constantly, until the sugar dissolves.
10.Remove from heat and stir in the peppermint extract or crushed after-dinner mints.
11.In another mixing bowl, beat the egg whites until stiff peaks form.
12.Gently fold the egg whites into the cake batter.
13.Pour the batter into the prepared cake tin and bake for 30-35 minutes or until a toothpick or skewer comes out clean.
14.Cool the cake on a wire rack for 10 minutes before removing it from the pan and letting it cool completely.
15.Top it with icing or ganache as you like and sprinkle some crushed peppermint candies.
