Ingredients

160 g dark chocolate , coarsely chopped
150 g unsalted butter , chopped
3/4 cup caster sugar
5 eggs , separated
3/4 cup pecan meal ( see Notes )
2/3 cup pecan nuts , coarsely chopped
1/3 cup dark chocolate , grated
1/2 cup pecan nuts , toasted , coarsely chopped , to serve
150 g dark chocolate , eating , coarsely chopped
1/2 cup thickened cream
2 tablespoons Baileys Irish Cream ( see Notes )
This recipe for Chocolate Pecan Cakes with Choc-Baileys Sauce is perfect for those who crave indulgent chocolate desserts. Instructions

1.Preheat the oven to 160°C.
2.Grease 8 small (1/2 cup or 125ml) bundt tins or ramekins.
3.Melt the chocolate and butter together in a heatproof bowl set over a saucepan of simmering water.
4.Add 1/2 cup of the sugar and stir until smooth.
5.Remove from heat.
6.In a separate bowl, whisk the egg yolks with 1 tablespoon of water until pale and thick.
7.Pour the chocolate mixture into the egg yolk mixture and stir until well combined.
8.Add the pecan meal, chopped pecans and grated chocolate, and stir until evenly distributed.
9.In a separate bowl, beat the egg whites until soft peaks form.
10.Gradually add the remaining sugar and beat until stiff and glossy.
11.Fold the egg white mixture into the chocolate mixture.
12.Divide the mixture between the prepared tins or ramekins.
13.Bake for 20-25 minutes or until cakes are cooked through.
14.Remove from oven and set aside for 5 minutes before turning out onto a wire rack.
15.To make the sauce, place the chocolate and cream in a small saucepan over low heat.
16.Cook, stirring, for 3-4 minutes or until the chocolate has melted and the mixture is smooth.
17.Remove from heat and stir in the Baileys Irish Cream.
18.Serve each cake with a drizzle of the chocolate Baileys sauce and topped with chopped toasted pecans.
