Ingredients

150 g butter , at room temperature
1/2 cup caster sugar
3 egg yolks
1 cup hazelnut meal ( see Notes )
200 g dark chocolate , melted ( see Notes )
1/2 cup toasted hazelnuts , coarsely chopped
2 sheets puff pastry , thawed
800 g pear halves in natural juice , drained , sliced thinly
1 egg white , lightly beaten
1 tablespoon raw sugar
whipped cream , to serve

Instructions

1.Preheat oven to 180°C. Line 2 baking trays with baking paper.
2.Using an electric mixer, beat butter and caster sugar until light and creamy.
3.Add egg yolks, 1 at a time, beating well after each addition.
4.Stir in the hazelnut meal and melted dark chocolate. Add the toasted hazelnuts and stir to combine.
5.Place 1 pastry sheet on each prepared tray. Using a knife, score a 1cm border around each pastry sheet, being careful not to cut all the way through the pastry.
6.Spread the chocolate mixture over the pastry, keeping it within the borders. Arrange the pear slices over the chocolate mixture, slightly overlapping. Brush the borders with egg white and sprinkle with raw sugar. Bake for 20-25 minutes until the pastry is puffed and golden.
7.Cut each jalousie into four pieces and serve with whipped cream.
