Instructions

1.Preheat the oven to 180°C/350°F.
2.In a food processor, pulse the digestive biscuits, salted peanuts, and dark chocolate chips until crumbly.

4.Press the mixture into the bottom of a 23cm/9inch springform pan and bake for 10 minutes.
5.In a large mixing bowl, beat the cream cheese until smooth.
6.Add the eggs, egg yolks, caster sugar, and 125ml sour cream, and mix until well combined.
7.Add the smooth peanut butter and mix until smooth and creamy.
8.Pour the mixture over the baked biscuit crust and smooth the top with a spatula.
9.Bake for 35-45 minutes, or until the edges are just set and the center is still slightly jiggly.
10.Let the cheesecake cool to room temperature, then refrigerate for at least 2 hours, or until fully chilled.
11.In a small saucepan, heat the 250ml sour cream and milk chocolate chips over low heat, stirring constantly, until the chocolate has melted and the mixture is smooth.
12.Pour the topping over the chilled cheesecake and smooth the top with a spatula.
13.Sprinkle the soft brown sugar on top of the chocolate topping.
14.Broil the cheesecake for 1-2 minutes, or until the sugar is melted and bubbly.
15.Let the cheesecake cool to room temperature, then refrigerate for another hour before serving.
