Instructions

1.Preheat the oven to 325°F.
2.In a double boiler, melt 8 ounces of semisweet chocolate and 4 tablespoons of butter. Once melted, remove from heat and stir in 1/2 cup of heavy cream and 1 tablespoon of cognac.
3.Pour the mixture into a 9x5 inch loaf pan, and let it cool in the fridge for about 10 minutes, or until set.
4.Melt 12 ounces of white chocolate and 6 tablespoons of butter in a double boiler. Once melted, remove from heat and stir in 2/3 of a cup of heavy cream and 1 tablespoon of cognac.
5.Spread the white chocolate mixture on top of the semisweet chocolate mixture, and let it cool again in the fridge for about 10 minutes, or until set.
6.In a small saucepan, melt 1/2 pound of semisweet chocolate. Once melted, whisk in 1 cup of granulated sugar, 1/3 cup of light corn syrup, and 3 egg whites.
7.Pour the chocolate mixture over the white chocolate mixture, and return the loaf pan to the fridge for at least 2 hours, or until firm.
8.To serve, run a knife around the edges of the pan, and invert the terrine onto a serving platter.
9.Slice and serve.
