Instructions

1.Preheat oven to 375°F. Butter and sugar four 8-ounce ramekins.

3.In a medium saucepan, whisk together 1/8 cup of sugar and 2 tablespoons of butter until light and fluffy. Add in the flour and cocoa mixture and whisk until smooth.

5.In a small bowl, whisk the egg yolks with the remaining 1/8 cup of sugar and 1 tablespoon of cornstarch until the mixture is pale and thick.
6.Slowly pour 1/3 of the chocolate mixture into the egg mixture while whisking continuously. Then pour the egg mixture back into the chocolate mixture in the pan and whisk until smooth. Remove from heat and stir in vanilla extract and chocolate liqueur.
7.In a clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture, being careful not to deflate the mixture.
8.Divide the mixture among the prepared ramekins and bake for 12-14 minutes until they rise and become firm. Serve immediately with fresh raspberries on top, if desired.
