Ingredients

2 liters whole milk
12 cardamom pods
85 g golden caster sugar , light brown is ok
100 g bittersweet chocolate or 100 g semisweet chocolate , good quality
10 g blanched almonds , chopped
25 g unsalted shelled pistachios , chopped

Instructions

1.In a heavy bottomed saucepan, boil the milk and cardamom pods for 30-35 minutes, stirring occasionally, until the milk has reduced to about 1/3 of its original volume.
2.Add in the sugar, stirring until it dissolves completely.
3.Melt the chocolate in a double boiler or microwave, then stir it into the milk mixture.
4.Add the chopped almonds and pistachios to the mixture, stirring until well combined.
5.Pour the mixture into individual kulfi molds or a large container, cover with foil, and freeze for at least 6 hours or overnight.
