125 g butter
200 g sweetened condensed milk
225 g biscuits ( crushed , 8 oz )
3/4 cup coconut
3/4 cup sultana
2 tablespoons cocoa powder
1 teaspoon vanilla extract
1 tablespoon butter
1 tablespoon boiling water
50 g finely grated chocolate or 2 tablespoons cocoa powder
225 g icing sugar ( powdered sugar or 8 oz )
1 teaspoon vanilla extract

Instructions

1.Melt the 125g of butter in a large bowl set over a saucepan of simmering water.
2.Add the sweetened condensed milk and stir until well combined.
3.Crush the 225g biscuits into small pieces and add to the bowl. Mix together with the coconut and sultanas.
4.In a separate bowl, mix together the cocoa powder, 1 teaspoon of vanilla extract, and the tablespoon of butter. Add the boiling water and mix until smooth.
5.Pour the cocoa mixture into the bowl with the other ingredients and mix well.
6.Line an 8-inch square tin with baking paper and pour in the mixture. Spread out evenly and press down firmly.
7.Melt the finely grated chocolate or 2 tablespoons of cocoa powder in a heatproof bowl set over a saucepan of simmering water. Once melted, gradually add in the icing sugar, mixing until smooth. Add in the teaspoon of vanilla extract and mix once more.
8.Spread the icing over the top of the mixture in the tin, making sure to cover it completely. Chill in the fridge for at least 2 hours, or until set.
9.Once set, cut into fingers and serve.
