Ingredients

4 teaspoons instant coffee
1 cup butter , room temperature ( do not use margarine )
1/2 cup sugar
1/2 teaspoon vanilla
1 3/4 cups flour
1/4 cup cornstarch
4 ounces semisweet chocolate

Instructions

1.Dissolve instant coffee in 1/4 cup hot water.
2.In a large bowl, beat butter, sugar and vanilla until creamy.
3.Gradually add in flour, cornstarch and coffee until dough forms.
4.Roll dough into a log and wrap in plastic wrap. Chill for 30 minutes.
5.Preheat oven to 325°F. Cut dough into 1/4” slices and place on parchment-lined baking sheet.
6.Bake for 12-15 minutes or until edges are lightly golden.
7.Cool on wire rack.
8.Melt chocolate in a microwave or double boiler.
9.Dip half of each cookie into melted chocolate and place on parchment paper to set.
