Instructions

1.Preheat the oven to 180°C and line a baking tray with parchment paper.

4.Take the saucepan off the heat and allow the dough to cool for 2-3 minutes before beating in the eggs one by one.
5.Transfer the dough into a piping bag and pipe onto the prepared baking tray. Place in the oven and bake for 20-25 minutes or until golden brown.
6.Remove the tray from the oven and let it cool completely on a wire rack.
7.For the chocolate glaze, melt chocolate in a double boiler and add butter. Once melted, remove the mixture from heat and continue stirring until the chocolate cools down.
8.Cut the baked eclairs lengthwise, spoon in whipped cream and ice with the chocolate glaze.
