Ingredients

1 1/4 cups desiccated coconut
1/3 cup caster sugar
1/4 cup plain flour
1 egg , lightly beaten
1/3 cup thickened cream
200 g dark cooking chocolate , chopped
2 eggs , separated

Instructions

1.Preheat oven to 160°C/320°F fan-forced. Grease 8-hole, 1/3-cup capacity round-based tart pans.
2.Combine coconut, sugar, flour, egg and cream in a bowl.
3.Divide mixture evenly into prepared pans. Using your fingers, press mixture evenly over base and sides of pans. Refrigerate for 10 minutes.
4.Place chocolate and 1/4 cup cold water in a heatproof bowl over a saucepan of simmering water. Stir until melted and smooth. Remove from heat. Cool for 5 minutes.
5.Using an electric mixer, beat egg whites in a bowl until soft peaks form. Gradually add sugar, beating until thick and glossy. Add egg yolks. Beat until just combined. Fold in chocolate mixture.
6.Spoon mixture into prepared pans. Smooth surface.
7.Bake for 15 to 20 minutes or until firm to the touch. Remove from oven. Stand for 5 minutes.
8.Run a thin-bladed knife around inside edge of each tart. Gently remove from pan.
9.Serve warm or cold.
