2 pounds/ 1 kg mexican chocolate clams ( in shells )

Instructions

1.Start by making the salsa - In a large bowl, combine the mayonnaise, Dijon mustard, cilantro, onion, jalapeno pepper, salt and freshly ground black pepper. Mix well and set aside.
2.In another bowl, combine the diced tomatoes, serrano chili, onion, lime zest, lime juice, cilantro, olive oil, salt and freshly ground black pepper. Mix well and set aside.
3.Melt the lard in a large skillet over medium heat. Add the chopped onion, minced garlic and chipotle pepper. Cook, stirring occasionally until the onion is soft and translucent.
4.Add the cooked black beans to the skillet and stir well. Season with salt and freshly ground black pepper to taste.
5.Preheat grill to high heat. Arrange the clams on the grill rack and cook for about 4-6 minutes until the shells open. Transfer the clams to a serving plate, top with the prepared salsa and black bean mixture. Garnish with lime wedges and serve immediately.
