Chocolate Beet Cupcakes are a creative way of incorporating beets into your dessert. These cupcakes are moist with a rich chocolate flavor and a vibrant purple-red color. The recipe uses cake flour, which ensures a tender texture. However, you can replace it with all-purpose flour if it's unavailable. The cream cheese frosting complements the cupcakes, but you can skip it for a less sweet option. These cupcakes are perfect to serve at parties or as an after-school treat for kids. You can also use canned beets if fresh ones are not available. Beware that using more beets than the recipe calls for may make the cupcakes too tart or muddy the chocolate flavor.

Instructions

.Preheat the oven to 350°F and line a muffin pan with cupcake liners.
.In a heatproof bowl, add the chopped chocolate and butter. Place over a saucepan of simmering water and let it melt, stirring occasionally.
.In a medium-sized bowl, sift together the cake flour, baking soda, baking powder, and salt.
.In a separate large bowl, add the sugar, egg, and vanilla. Beat well until the mixture is smooth.
.Gradually add the melted chocolate mixture to the large bowl, stirring until well combined.
.Fold in the sliced beets and flour mixture.
.Pour the batter into the muffin pan, filling each liner up to 3/4 of the way full.
.Bake in the preheated oven for 15-20 minutes or until a toothpick inserted in the center comes out clean.
.Take the cupcakes out of the oven and let them cool on a wire rack.
.For the cream cheese frosting, use an electric mixer to beat the cream cheese, softened butter, vanilla, and beet juice until smooth and well combined. Gradually add the icing sugar and mix until creamy and spreadable.
.Frost the cooled cupcakes and serve.
