Ingredients

12 -14 melba crackers ( mine were about 6x9cm )
1 cup water
1 cup sugar
1 tablespoon chocolate liqueur ( can use brandy , other liqueur or omit )
6 cups milk
10 -12 tablespoons sugar
120 g custard powder
1 teaspoon vanilla essence
2 tablespoons butter ( separated )
50 g chocolate couverture
1 tablespoon cocoa powder
2 banana jelly
2 cups boiling water
2 cups cold water

Instructions

1.Place melba crackers in a square dish to cover the base and set aside.
2.In a saucepan, combine water, 1 cup sugar, and chocolate liqueur and stir well. Bring the mixture to a boil over medium heat and let it simmer for 5 minutes, until the sugar dissolves and the mixture thickens.
3.In a separate bowl, whisk together milk, custard powder, 10-12 tablespoons sugar, and vanilla essence until smooth.
4.Pour the milk mixture into the saucepan with the sugar mixture and stir well. Cook until the mixture becomes thick and coats the back of a spoon, stirring constantly.
5.Add butter and mix well. Pour the custard mixture over the melba crackers in the dish.
6.In a small mixing bowl, mix chocolate couverture and cocoa powder until melted, then pour over the custard layer.
7.In another mixing bowl, dissolve 2 banana jelly sachets in 2 cups boiling water and add 2 cups cold water. Mix well and pour over the chocolate layer.
8.Refrigerate for at least 3 hours to set before serving.
