125 g butter , softened
3/4 cup firmly packed brown sugar
1 egg
1 1/2 cups plain flour
1/4 cup self-raising flour
1/4 cup cocoa powder
28 vanilla raspberry marshmallows
375 g dark chocolate melts
1 tablespoon vegetable oil
1/4 cup raspberry jam

Instructions

1.Preheat the oven to 180°C (160°C fan-forced) and line 4 baking trays with baking paper.
2.In a large bowl, beat the butter and brown sugar together until light and creamy.
3.Gradually add the egg and mix well.
4.Sift the flours and cocoa into the bowl and mix until well combined to form a dough.
5.Roll the dough out between 2 sheets of baking paper to 5mm thickness.
6.Cut out 28 x 7cm circles using a scone cutter.
7.Place the circles onto the prepared baking trays and bake for 8-10 minutes or until lightly golden.
8.Allow to cool completely.
9.Cut each marshmallow in half widthways.
10.Spread 1 teaspoon of raspberry jam over half of the biscuits.
11.Top each jam-covered biscuit with 2 marshmallow halves.
12.Place another biscuit on top of each marshmallow half and press down gently to sandwich them together.
13.Place the biscuits in the freezer for 15 minutes.
14.Melt the chocolate and oil together in a microwave-safe bowl.
15.Dip each biscuit, one at a time, into the chocolate mixture, using 2 forks to turn over and coat completely.
16.Allow the excess chocolate to drip off and place on a wire rack to set.
17.Once set, store the biscuits in an airtight container in a cool, dry place.
