Ingredients

1 lb beet
1 lb raw shrimp
8 cups water
1 cup sour cream
4 tablespoons chopped dill
3 tablespoons red wine vinegar
3 tablespoons lemon juice , fresh
1 sliced lemon
1 1/2 teaspoons sugar
4 green onions
4 radishes
3 hard-boiled eggs
3 potatoes
2 cucumbers , peeled and seeded
salt and pepper
Chlodnik is a famous soup in Poland and other Eastern European countries. It is a traditional dish that is usually served cold in summer. Instructions

1.Wash and peel the raw beet. Cut it into small cubes. Set aside.

3.In a large bowl, mix together the sour cream, chopped dill, red wine vinegar, lemon juice, sugar, and salt. Mix well until smooth.
4.Add 8 cups of water and mix well.
5.Add the raw beet cubes, potatoes, and shrimp. Mix well.
6.Cover the bowl and refrigerate for at least 2 hours or until it becomes chilled.
7.Garnish the soup with sliced green onions, radishes, hard-boiled eggs, sliced lemon, and chopped dill.
