1 lb dried pinto bean
water , to cover and cook
salt
1 medium onion , peeled and cut in half
4 garlic cloves , peeled
1 corn tortilla
3 -4 dried red chilies ( chile japones )
1/2 cup lard
Chita's Refried Beans are a Mexican staple dish that originated from ranch beans. The dish is popularly served alongside typical Mexican cuisines such as tacos, burritos, or dressed up as a dip. Instructions

1.Rinse and clean 1 lb of dry pinto beans.
2.Add beans to a pot and cover with water above an inch.
3.Add salt, onion, and garlic cloves.
4.Boil for 2 hours until tender and then let cool.
5.Reserve 2 cups of bean water and drain the rest.
6.Heat lard in a large saucepan and add a corn tortilla and 3-4 pieces of dried chili.
7.Sauté until the tortilla is crispy and the chili is brown.
8.Add beans to the pan and smash with a potato masher leaving some texture.
9.Simmer for 5 minutes until creamy and add reserved bean water if necessary.
10.Serve hot alongside some Mexican rice and enjoy!
