1/2 carrot
1/3 burdock root
1 fresh lotus root
5 shiitake mushrooms
3 tablespoons sake

Instructions

1.Rinse the rice in a fine-mesh strainer and transfer to a medium saucepan. Add 1 3/4 cups of water and bring to a boil over high heat. Reduce the heat to low, cover, and simmer until the rice is tender and the water is absorbed, about 15 minutes.
2.Transfer the rice to a bowl and mix in the sushi vinegar. Let cool to room temperature.
3.Grate the carrot and burdock root and soak in cold water for about 3 minutes. Rinse in cold water and squeeze out any excess water. Slice the lotus root into thin rounds. Remove the stems from the shiitake mushrooms and slice into thin strips.
4.In a medium saucepan, combine the sake, soy sauce, and sugar over high heat. Bring to a boil, then add the vegetables and shiitake mushroom strips. Reduce the heat to medium and stir-fry the vegetables for about 3 minutes, until coated in the sauce. Let cool to room temperature.
5.Divide the sushi rice among 4 bowls. Arrange the vegetables on top of the rice and serve at room temperature.
