Ingredients

1 can black beans

1 box goya Mexican rice or ( 8 ounce ) box jasmine rice
1 teaspoon fresh cilantro
1/4 teaspoon cumin
1/2 teaspoon adobo seasoning ( red top )
1 pinch paprika
1 package taco seasoning
1 pinch salt ( optional )
1 pinch pepper ( optional )
1 package guacamole seasoning mix
1 -2 avocado
lettuce , shredded ( optional )
1 -2 cup of shedded cheddar cheese or 1 -2 cup monterey jack cheese
extra virgin olive oil

Instructions

1.Rinse the rice in cold water 2 or 3 times until the water runs clear and drain excess water.

8.Mix the taco seasoning mix with a cup of water until there are no lumps.
9.Add the taco seasoning water into the skillet with corn, tomatoes, and beans.
10.Cook on medium heat until the sauce thickens.
11.In a mixing bowl, combine the guacamole seasoning mix with mashed avocado and set aside.
12.Arrange cooked rice, chicken, black beans, corn, tomatoes, cheese, lettuce, and guacamole dip in separate bowls.
13.To serve, place desired amounts of rice, chicken, black beans, corn, tomatoes, cheese, lettuce, and guacamole dip into a bowl and serve immediately.
