Ingredients

1 loaf ciabatta , halved horizontally , each half cut crosswise into 8 5x3-inch slices
olive oil
1 cup creamy gorgonzola ( the least crumbly )
1 teaspoon chopped fresh thyme

Instructions

1.Preheat oven to 350°F.
2.In a small bowl, mix together bay leaves, paprika, chipotle chiles and cumin seed. Season beef steaks generously with the rub mixture.
3.Preheat the grill to high. Grill steaks until medium-rare, approx. 5 minutes per side, or until the internal temperature registers 120–130°F (50–55°C) on an instant-read thermometer. Let rest for 5-10 minutes while you prepare the gorgonzola toasts.
4.Brush ciabatta slices with olive oil and place on a baking sheet. Toast in the oven for 5-7 minutes, or until golden brown. Remove from oven and let cool.
5.Spread gorgonzola cheese onto each slice of ciabatta and sprinkle with chopped thyme.
6.Serve steaks with gorgonzola toasts on the side.
