Instructions

1.Heat olive oil in a large pot over medium-high heat.

4.Add the garlic and chipotle chile and cook for another minute.

6.Return the pork to the pot and bring to a simmer, cooking for 15-20 minutes until the pork is cooked through.
7.Remove the pork again and shred with two forks, then return to the pot.
