2 tablespoons water
3/4 lb ground pork
1/2 lb ground veal or 1/2 lb ground sirloin

1 large egg , lightly beaten
1/4 cup chopped cilantro or 1/4 cup flat leaf parsley
16 wooden skewers , soaked in water
lime wedge ( to garnish )

Instructions

1.Preheat the oven to 375°F.
2.In a bowl, mix the whole milk and breadcrumb together
3.In a small pan, cook the chopped bacon until crispy, then add onion and garlic.
4.Stir in the chopped chipotle chile, ground cumin, and dried oregano with 2 tablespoons of water.
5.Mix in the cooked bacon mixture to the breadcrumb and milk mixture.
6.Add ground pork and veal or sirloin to the mixture. Mix in salt and beaten egg.
7.Add fresh cilantro or parsley and mix again.
8.Divide the mixture into 16 meatballs, and place each meatball on the soaked skewers.
9.Place the skewers on a baking sheet, and bake them in the oven for 25-30 minutes, or until they're cooked through.
