Ingredients

4 bell peppers ( green or red )
1 lb ground turkey , browned and drained
2 -4 tablespoons dried chipotle powder ( I used 4 but we like spicy ! )
1 teaspoon garlic powder
2 teaspoons cilantro
2 tablespoons cumin
1 cup kernel corn
1/2 small onion , diced
1 small zucchini , diced
1 medium tomatoes , diced
1 can enchilada sauce ( I prefer El Paso , medium )
1 - 1 1/2 cup shredded monterey jack cheese ( or whatever cheese you prefer )

Instructions

1.Preheat the oven to 350°F.
2.Cut the tops off of the bell peppers, remove the seeds and membranes, and set them aside.
3.In a large bowl, mix together the cooked ground turkey, chipotle powder, garlic powder, cilantro, cumin, corn, onion, zucchini, tomatoes, and 1/2 cup of the shredded cheese.
4.Stuff each bell pepper with the turkey mixture, leaving room at the top for the cheese.
5.Pour the enchilada sauce evenly over the stuffed peppers.
6.Sprinkle the remaining cheese on top of the enchilada sauce.
7.Bake in the oven for 35-40 minutes or until the peppers are tender and the cheese is melted and bubbly.
