2 tablespoons fresh cilantro
1 seeded and finely chopped fresh serrano chili pepper
1/2 cup chopped peeled jicama
1/4 cup thin strips red radish

Instructions

4.Cover; place in oven and bake for 2 1/2 to 3 hours or until meat is tender.
5.Remove from oven and shred beef with two forks.
6.Serve on warm whole wheat tortillas with cheese, Pico de Gallo, and jicama slices on top.
